Happy Mother’s Day! I hope everyone had a nice weekend with those they love. This Mother’s Day was a bit different because we couldn’t take my grandmas out to lunch because of the quarantine. These life adjustments that we have to make weren’t going to hold us back from making my mom and grandmas miss out on their special day! We were able to have a combined lunch with both my grandmas and spend some time with them. I’m sure they could care less about materialistic things, and would rather spend quality time with us.
If your mom is like mine, there’s nothing that says “treat” more like chocolate covered strawberries. Yes, it is a simple dessert to make but believe it or not, I’ve messed up doing it. The melting of the chocolate always gets me! When you live in a place as humid as Hawaii, it’s hard to get the chocolate to set without it being a goopy mess. That’s why when I discovered the Dolci Frutta chocolate wafers, it was a GAME CHANGER! No more make-shift double boiler, no more burning chocolate in the microwave, no special kitchen appliance just for melting chocolate, none of that. The chocolate wafers come in a convenient paper bowl that pops right in the microwave. In 4 increments of 30 seconds at 1/2 power (for my microwave it was level 5), I had perfectly melted chocolate that was ready to cover my strawberries. The melted bowl of chocolate covered about 24 strawberries (in a thick coat of chocolate). Also, this works like chocolate shell, where it hardens on it’s own! The humidity here is so crazy that if I were to use regular chocolate chips to melt, it probably wouldn’t harden unless I put it in the fridge.
The trick to chocolate covered strawberries is not only the chocolate, but ensuring that the strawberry itself is dry. If the strawberry is still wet, the chocolate may not stick, or the water may ruin the melted chocolate. It takes a bit longer to let the strawberries dry completely because the water gets in the seed divots, but it’s worth the wait. I covered my Mother’s Day chocolate covered strawberries with crushed oreos and rainbow sprinkles. Here’s the final result!
Chocolate covered strawberries are a sure way to brighten someone’s day. They made my mom happy and my grandmas loved having it as a dessert after our lunch. If you have the chance to make it, let me know what kind of toppings I should try next!
DIRECTIONS:
- Wash and dry strawberries.
- Stick toothpicks in the strawberry stems to make the dipping process easier (the green leaves hide the toothpick hole). If you don’t care about presentation, then a fork works too! It just leaves many holes in the top. Set aside.
- Melt chocolate in double boiler, microwave, or the easiest option – with the Dolci Frutta chocolate wafers. If using the Dolci Frutta chocolate wafers, follow the instructions on the packaging.
- Prepare a baking sheet with parchment or wax paper.
- Dip strawberries into the melted chocolate.
- Lay strawberries on parchment/wax paper.
- Optional: sprinkle additional toppings onto the strawberries while the chocolate is still wet.
- Wait for chocolate to harden or place completed strawberries in the fridge until set.
- Enjoy!
